Fall Pathways Course Listing:
Are You Up-To-Date with Sanitation?

The Fall Pathways Course Listing is now on the Child Nutrition & Food Distribution web site http://www.dpi.state.nd.us/child/ under both the New & Hot and Training tabs. The registration form is included with the course listing. No mailings will be made of this listing. With all of the changes made over the summer – new meal pattern, NDFoods, six cents – we have decided to offer only two courses: Sanitation and Safety and Sanitation Update. Authorized reps and lead food service workers (LFSW) should make sure the information on the course listing is made available to all food service workers.

According to ND Code, the LFSW is required to attend a 10-hour Sanitation and Safety class within six months of being hired for that position. The LFSW must then complete a three-hour Sanitation Update training every five years thereafter.  Each individual completing the Pathways trainings for Sanitation and Safety or Sanitation Update will receive a certificate of training. We recommend that a copy of this certificate be placed in the individual’s personnel file.

The Child Nutrition office keeps records of the trainings in a Pathways database. Names of the LFSW are taken from NDFoods. The person listed as the LFSW in NDFoods should be the “head cook” for the site. Since an email address is not a required field in NDFoods, whether or not a person has an email address does not qualify for why the person listed isn’t the head cook. Name changes of food service personnel due to marriage, divorce or other legal proceedings should be reported to our office so we can update the Pathways database.

There are a few other courses that can be taken instead of the Pathways version. Approved sanitation trainings can be found on the Child Nutrition & Food Distribution web site under the Training tab and clicking on the Sanitation Training Requirements link. If sanitation training other than Pathways is taken, a copy of the certificate verifying training was completed must be sent to the Child Nutrition office (either by mail or fax to 328-9566) so credit for the training can be input into the Pathways database.

Food Safety Tips for Donated Produce

Members of your local community may want to donate produce grown in private or community gardens to your childcare program.  These products must be safe and of acceptable quality .  When appropriate precautions are taken, fruits and vegetables from local growers can be served safely to children.

  • Accept produce harvested from local growers only when kitchen staff is present to receive it.  All produce dropped off or left when staff is not present should not be used in the CACFP program.
  • Conduct a visual inspection of any vehicle used to transport produce to a school to assess whether it is clean.  A vehicle should not be used to transport fresh produce if it is also used to transport live animals.
  • Receive and inspect produce harvested from local growers according to the same procedures used to inspect produce from distributors.  Rotten or damaged produce should not be accepted.
  • Do not use any produce that has been noticeably contaminated by animals or insects.
  • Reject produce that does not meet CACFP standards.
  • Refrigerate garden produce immediately, unless the particular item is normally held at room temperature. 
  • Store, prepare and serve local grown produce separately from other sources of produce to maintain traceability.
  • Document service of locally grown produce on the menu/food production records.

By following these food safety tips for donated produce, you can serve fresh produce to children and take pride in the fact that it was grown locally.

It’s Mandatory Training time!

For CACFP’s that have been on the food program for years: Your mandatory training will be available on our website as a PowerPoint training.  You will have a short quiz at the end of the training that will be due back to our office by October 17, 2012.    You will be notified by email when the training is available on our website.

For NEW CACFP centers and Directors:  Your mandatory training will be held on Tuesday, September 19, 2012 in Bismarck from 1-4, or in Fargo on Wednesday, September 26, 2012 from 1-4.  Registration will be available on our website under New and Hot. 

We will be notifying all persons required to attend the in-person training.  All other key CACFP staff (Directors, Owners, CACFP Coordinators, etc.) must complete the on-line training.

NDFoods

NDFoods is the new Child Nutrition reporting system – replacing the FNP System.  As with any new computer system it takes some time to become familiar with the new processes and applications.  Please review the following tips that will assist you in using the system and completing your program renewals and claims:

  • CACFP sponsors will continue to submit claims in the FNP system through September. October claims will be submitted through NDFoods
  • The Authorized Representative is the only person who has initial access to NDFoods.  The Authorized Rep must add additional individuals to work in NDFoods.  The Authorized Rep is usually the Center Director, Owner or Business Manager.
  • Any individual needing access to work in the new NDFoods system must have a current North Dakota login and have a current/active email address. NOTE: The North Dakota login IDs are NOT maintained or controlled by the Child Nutrition office. For information on obtaining/retrieving login or password OR seeing if you are already registered OR other questions or concerns with the ND login process please go to:  https://apps.nd.gov/dpi/cnfd/ndfoods/login.htm   Our office cannot help you with this process.
  • Each individual MUST create and maintain their own password (Another person cannot do this for them).  We will no longer be generating a password for individuals.
  • The Authorized Rep cannot just make up a login. This will NOT connect anyone to NDFoods.
  • VERY IMPORTANT: Just because an individual has a ND login they are not automatically connected to NDFoods.  Once an individual has obtained a ND login and has received a confirmation email, they must provide their Authorized Rep with the login and the Authorized Rep must assign them, within NDFoods, under the individual tab, specific role(s) for the CACFP. NOTE: the Lead food service worker MUST be the head cook, per site, but may or may not need a ND login (this is for Sanitation tracking purposes) An individual may be assigned multiple roles.

Some of the Creditable Food Guide pages will also be added to your new Menu Planning workbook that you will receive when you are approved for the new fiscal year.

New Child Nutrition Staff

Joe Oster
My name is Joe Oster. I presently live in Medora, North Dakota with my wife Amanda and two kids, Sophia and Isaiah.  I have been in the restaurant industry for the last seventeen years.  I have held many job titles within those years such as dishwasher, line cook, executive chef, and food service director.  I also have an elementary education degree and a few years of teaching experience.  I look forward to working with the Child Nutrition Programs assisting with monitoring reviews and providing training and technical assistance to schools and childcare programs.

Lesli Murch
My name is Lesli Murch.  I live in Hunter, ND with my husband Scott and our two boys Luke (4 years) and Grant (4 months). 

I have a BS in Child Development and Family Science through NDSU.  I have worked in Head Start/Early Head Programs for the past 13 years.  I have been a teacher assistant, teacher and Education Services Coordinator.

I am excited for my role as Child Nutrition Specialist for the Child Nutrition and Food Distribution Programs where I will be monitoring reviews and providing training and technical assistance to schools, childcare programs and summer food programs.

Shayna Griffiths
My name is Shayna Griffiths and I am a licensed and registered dietitian with over 12 years experience in both the US and UK.  After living in the UK for the past 9 years, I moved back to Bismarck where I was born and raised to be nearer my family.  I am the mother of 2 ½ year old twin boys named Bryn and Dylan. 

I have worked as a dietitian for WIC, hospitals, and long term care facilities however, I am particularly excited about my most recent appointment as an Education Program Administrator for the Department of Public Instruction where I will be working with the Child Nutrition Programs assisting with monitoring reviews and providing training and technical assistance to schools and childcare programs.

Tara Koster
Hello, my name is Tara Koster.  I live in Mandan ND, with my husband Cory and my lovely daughter Taylor who is 6 (going on 13). I started with DPI Child Nutrition and Food Distribution on July 23RD 2012 as the office manager. I have 10 years of experience in the administrative field. I lived in Minneapolis, MN from 2000 to late 2004.  While there I worked at a Swimming Pool company as the warehouse / purchasing manager.  My husband and I moved back to ND in late 2004 so my husband could take a position with BNSF as a conductor. We were married in 2005 and had a daughter in 2006.  I worked at Recreation Supply Co. for about a year as an administrative assistant.  I took a couple years off working to stay at home with my daughter until preschool age.  I went back to work at a tax and financial firm as an administrative assistant.  Then found a job with DPI. I look forward to working with DPI Child Nutrition and Food Distribution. I love it so far!

Vegetable Flowers

Makes approximately 2 flowers                                      
Ingredients:                                                                             

  • 18 sugar snap peas
  • 2 cherry tomatoes
  • 6 carrot sticks (2 long and 6 short)
  • Ranch dressing

Supplies:

  • Large bowl
  • 2 small bowls
  • Plates
  • Napkins

Directions:

  • Invite children to wash their hands and join you for a cooking activity.
  • Show children how to make the flower out of the vegetables provided.
  • Invite children to arrange their own “flower” or have them be creative and make their own picture.
  • Once the creation is assembled, enjoy your healthy snack together!
