rules clarify that local agencies participating in USDA Child Nutrition
Programs must comply with the “red book,” North
Dakota Requirements for Food and Beverage Establishments. Who is required to take training?The manager at each site will attend initial and ongoing training. This person may be referred to as the site manager, kitchen manager or lead worker in the foodservice. Usually, there is only one lead worker per site. Some lead workers have educational backgrounds or training that may exempt them from taking the initial course. What kind of initial training is required?Approved classroom courses are

Courses taken since June 1996 will satisfy the initial training requirement. What is required for ongoing training?A course update/review must be taken every five years after completing the initial course. The Sanitation Update course will be provided by DPI at various locations across the state. What is the cost of training?There is no fee for the Pathways Sanitation and Safety course or Sanitation Update. By what date must training be completed?A new lead worker will have up to six months from the start of duties to complete the initial training. Is a physical examination required for foodservice employees?No, the foodservice employee physical exam is no longer required.
