Sanitation Training RequirementsThe manager at each foodservice site participating in USDA Child Nutrition Programs must attend initial and ongoing sanitation and food safety training. Administrative rules clarify that local agencies participating in USDA Child Nutrition Programs must also comply with the “red book,” North Dakota Requirements for Food and Beverage Establishments. The manager may be referred to as the site manager, kitchen manager or lead worker in the foodservice and should be listed as the Lead Foodservice Worker (LFSW) on the online site application. Usually, there is only one LFSW per site. Some LFSW have educational backgrounds or training that may exempt them from taking the initial course. Documentation (transcript and/or training certificate) allowing for exemption should be provided to our office. Approved initial sanitation courses are:
A new LFSW will have up to six months from the start of duties to complete the initial training. A course update/review must be taken every five years after completing the initial course. Update courses will be provided at no cost by DPI at various locations across the state as announced by the Pathways to a Quality School Foodservice Course Schedule.
